Angel Hair Pasta with Tomatoes and Basil
With all the fresh tomatoes and basil in my garden I thought I would try a pasta sauce made with fresh ingredients. Turned out great.
Olive oil about 1½ Tbsp
8 cloves of garlic, minced
1½ cups basil fresh minced
8-10 diced Roma tomatoes
1 Tbsp capers
grated Parmesan cheese
angel hair pasta cooked according to package directions while you make the sauce.
Cover cast iron pan with a thin layer of olive oil. Saute garlic in olive oil until soft. Add one cup of basil, saute just one minute. Add tomatoes, saute until juice runs and thickens slightly. Add capers. Add pasta to pan, stir to mix thoroughly and serve topped with remaining basil and Parmesan cheese.
