Cooking with Sarah

| January 11, 2008 8:00 PM

"Cooking with Sarah" will run weekly. The column features recipes submitted by readers.

This week's recipe was submitted by Myrtle McLean. She is advertising director at the Bonners Ferry Herald.

The Lazy Pie recipe was passed on to Myrtle by her grandmother.

"I make it every time my brothers come to visit," she said.

Cook Lazy Pie in a cast iron pan is highly recommended.

Ingredients

1 cup flour

1 cup sugar

1 cup milk

1 teaspoon baking powder

2 eggs

1 teaspoon salt

Combine all ingredients together and mix well.

Melt 1 cup of butter in a cast iron pan. Allow it to cool slightly.

Pour batter over top of butter. Spoon a can of pie filling evenly over top.

Bake at 375 degrees for 35 to 45 minutes.

If you have a recipe, contact Sarah at 267-5521 or send an e-mail to sthomas@cdapress.com.

Until next week, happy cooking!
