Cooking with Sarah is a weekly column featuring recipes submitted by readers.
This week’s recipe for Huckleberry Syrup was submitted by my father, John Thomas.
“This is great on ice cream and it is very easy to make,” he said.
Ingredients
2 cups fresh huckleberries
1/3 cup sugar
1 tablespoon fresh lemon juice
1/4 teaspoon of salt
1/2 teaspoon of vanilla extract
Wash and crush huckleberries. Add sugar lemon juice and salt, and mix. Put in sauce pan and bring to a boil for one minute. Add vanilla extract. Chill. Serve over cake, ice cream or pancakes.
