Zucchini Muffin Recipe by Barbara Rexford

I have grated most of my zucchini and frozen
it, but if you still have some fresh around
this is a great recipe. I you use frozen make
sure you used the liquid also.
Ingredients
4 cups flour 2 eggs
2 cups grated zucchini 1 cup milk
1½ tsp salt ½ tsp cinnamon
4 tsp baking powder 1 Tbls sugar
2/3 cup sugar 1/4 tsp mace
8 Tbls oil
Directions
Mix flour, salt, baking powder, sugar and
mace.
Add zucchini & mix.
Add eggbeaten lightly with milk and oil.
Spoon into greased muffin tins.
Mix cinnamon and sugar, sprinkle on top of
muffin batter.
Bake at 400º for 20 minutes.
Makes 12 large muffins.
