Mayonnaise

This is a recipe my kids would bring into show and tell when they had to do a demonstration. It was always a good show stopper. If you have never made your own mayo why not try this. You can make flavored mayo by adding a variety of herbs.

1 egg

2 Tbsp white or apple cider vinegar

1/2 tsp dry mustard

1/4 tsp salt

1 cup salad oil

1/4 tsp paprika (opt)

Dash of cayenne pepper (opt)

Into a blender put egg, vinegar, mustard, salt, paprika & cayenne and 1/4 oil. Cover and blend 15 seconds at medium speed. Remove center of cap on cover with blender still moving and pour remaining oil in a fast stream. Oils must be added within 15 seconds. Mixture will whip up to mayo. You can use any oil you like, but olive oil will set a thick mayo. Do not over blend or it will fail.
