Spicy turkey burgers with guacamole
I just tried this recipe this evening. Delicious! I used a orange bell pepper. I guess you could also use a yellow one.
I was delighted with the results. I served it with sliced tomato, onion and a slice of Gouda cheese on a burger bun. I took the 3 burgers I had left and froze them for later use. Enjoy!
Makes 4
Ingredients:
1 pound ground turkey
1 egg
1 jalapeño or other hot green chili, seeded and minced
3 Tbls minced red bell pepper
2 Tbls minced green onion
1 tsp ground dried chilies
1/4 tsp ground cumin
salt & pepper to taste
olive oil for frying
1 cup guacamole, recipe to follow
Combine turkey with egg and mix well. Use your hands. Add remaining ingredients except the guacamole. Mix well and form into burgers. In a heated pan with a Tbls spoon of olive oil, cook burgers until browned on both sides and thoroughly cooked through. Place on a bun and add tomato, onion, cheese and top with guacamole.
Guacamole:
2 medium avocados
juice of 1 lime
1/2 cup chopped tomato
2 Tbls chopped fresh cilantro
2 Tbls chopped green onions
1 tsp minced seeded jalapeño
salt & pepper
Place all the ingredients in a blender or food processor and blend until smooth.
