Quick Macaroni and Beef
Are you someone who likes hamburger helper or just a quick meal? Here is one you don’t need a package for. I use tarragon, but you can use any herb that you like. It is a quick meal for those in a hurry or those who don’t to cook. Just add a nice green salad.
¼ - ½ pound mushrooms sliced or quartered
2 tablespoons chopped onion
¼ tsp tarragon leaves
2 T olive oil
1 lb lean ground beef or turkey
¼ tsp salt
¼ tsp pepper
1 clove minced or 1/8 tsp garlic powder
16 oz tomato sauce
8 oz (two cups elbow or other macaroni
½ cup shredded cheese
In a large skillet or pot sauté mushrooms, onion, and tarragon in oil until onion is crisp tender. Add beef; brown lightly. Stir in salt, pepper, garlic powder, and tomato sauce. Simmer uncovered 10 minutes, stirring occasionally. Meanwhile, cook macaroni as directed; drain. Add macaroni to pot; mix well with meat and sauce. Sprinkle cheese on top; turn off heat; cover and let set for about 1 minute till cheese melts. Makes 4-6 servings.
