Vegetarian Stuffed Avocados
I just tried this salad and really liked it. I love to try different salads and I have started to use avocados more than I have before. Avocados have several health benefits. One avocado provides the body with vitamins A, C, E, K and B6 along with potassium and healthy fat. You can serve this either in the leftover skin of the avocado after you scoop the meat out or onto a nice leaf of buttercrunch lettuce.
Ingredients
2 avocados, cut in cubes.
1 lime, juiced
2 Tbls olive oil
1 Tbls balsamic or wine vinegar
salt & pepper to taste
¼ cup canned corn or frozen, defrosted
½ cup garbanzo beans
1 Roma tomato, finely chopped
¼ cucumber, finely chopped
½ orange, red or yellow bell pepper
4 thinly sliced green onions
¼ cup crumbed feta
Directions
Halve and pit the avocados. Remove avocado meat from the shells. Sprinkle with lime juice to keep from browning. In a medium bowl, slowly whisk oil & vinegar. Season with salt & pepper. Add remaining ingredients, except the feta. Gently mix until ingredients are coated. Fill avocado halves and top with feta. You can also use nice lettuce leaves instead of the avocado shells to present the salad
