Chicken ala King

Make this quick and easy dish to use up leftover chicken or turkey. Add baking powder biscuits as a special treat.

Chicken

ala King

¼ cup chopped onion

3 Tbls olive oil

3 T flour

½ tsp salt

1½ cups chicken broth

2 cups cubed cooked chicken

2 cups mixed cooked vegetables

12 mushrooms sliced

Cook onion in oil until tender and mushrooms and cook until tender. Blend in flour and salt. Add broth slowly till well blended (can use cornstarch instead, but use only ½ as much cornstarch). Stir until thickened. Add chicken and vegetables. Stir until thoroughly heated. Serve over biscuits.

Baking Powder Biscuits

2 cups sifted flour

1 Tbls baking powder

½ tsp salt

4 Tbls butter

3/4 cup milk

Sift dry ingredients together and cut in butter. Add milk to make a soft dough. Place on a floured board and knead lightly using a little flour as possible on the board. Do not over work or the biscuits will be tough. Roll out 1 inch thick and cut with a biscuit cutter. Place on a baking sheet and bake in a very hot oven (450 F) about 12 minutes. Makes 14 2-inch biscuits.
