Recipe: Southwestern Salad with Avocado Dressing
This may be one of my favorite salads. You can also use the dressing as a substitute
for mayonnaise on a sandwich. I just recently used it on a BLT. This is a hardy salad.
I used cherry tomatoes & yellow peppers in this photo, but can vary this to your liking.
The same goes for the beans. Have fun with it.
Dressing:
1 avocado, diced
2 cloves garlic, chopped
1/2 tsp salt
1/2 tsp pepper, freshly ground
1/4 cup olive oil
1/4 cup fresh cilantro leaves
1 lime, juiced or 2-3 Tbls of juice
Place in a blender and blend well.
Salad:
1 head of lettuce, torn in bite-sized pieces
1 cup bell peppers, diced
1/4 cup cilantro
15 oz black beans (canned) or cooked and cooled
1/2 cup red onion, diced
15 oz corn, canned & drained
1/4 cup green onion, sliced
3/4 cup tomatoes, diced or cherry tomatoes cut in half
In a large bowl combine all the ingredients.
Top with dressing, toss to coat and serve.
Serving size is about 2 cups, serves five.
