Recipe: Sixty-minute rolls are quick, easy

Need a quick and easy homemade dinner roll? This is the one for you.

3½ to 4½ cups unsifted flour (you can easily use whole wheat flour)

3 Tbls sugar

1 tsp salt

2 packages of yeast (2¼ tsps per package)

1 cup milk

½ cup water, warm not hot

¼ cup butter

In the water, stir in yeast to soften. In a large bowl thoroughly mix 1½ cups flour, sugar and salt. Combine milk, butter in a saucepan. Heat over low heat until liquids are warm about 120°, melting butter. Gradually add to dry ingredients alternately with the water yeast mixture. Beat 2 minutes at medium speed of an electric mixer, scraping the bowl occasionally. Add ½ cup flour, beat at high speed for 2 minutes. Stir in enough additional flour to make a soft dough. Turn out on a floured board. Knead until smooth and elastic, about 5 minutes. Please in greased bowl, turning to grease the top. Cover: place bowl in a pan of water at about 98°. Let rise about 15 minutes.

Turn dough onto a floured board. Divide in half and shape as curlicues or clovers (see below).

Try other shapes, all work.

Cover; let rise in warm place for 15 minutes. Bake at 425° about 12 minutes or until lightly browned. Remove from muffin tins and cool on wire racks.

Curlicues: Using ½ the dough roll it into a 12x9-inch rectangle. Cut into 12 equal strips. Coil each strip into a roll. Place in a greased

muffin tin.

Clovers: Cut into 12 equal parts. Cut each part into 4 equal parts and roll into balls place the 4 balls in a greased muffin tin.
