Ham, Bacon and Corn Soup
It’s that time of year when a good hot bowl of soup feels good. Enjoy on a day when you can cook up a quick and easy pot of soup.
Ingredients:
3 slices of bacon, cut in small pieces
1/2 large onion, diced
1 1/2 cups peeled diced potato
1/2 red pepper, diced
1 tsp thyme
black pepper to taste
2 cups broth
3 cups corn, fresh or frozen
1 1/2 cups diced ham
1 T cornstarch
2 1/2 cups milk
extra cooked bacon and green onion for garnish
Add bacon and onion to a pot over medium heat. Cook until onion is translucent. Add potato, red pepper; sauté just a few minutes until lightly cooked. Add thyme, black pepper and chicken broth. Bring to boil, reduce heat and let simmer 7 minutes or until potatoes are cooked through. Stir together milk and cornstarch. Add into ham mixture and bring to boil while stirring. Let boil about 2 minutes. Garnish with crumbled bacon and onions if desired.
