Banana-Plum Bread

Here is a slightly different banana bread. It uses both fresh bananas and dried fruit for a different and very sweet bread. You might want to use a little less sugar than the recipe calls for.

Makes one loaf

1¾ cups flour

2 tsp baking powder

½ tsp salt

¼ tsp baking soda

½ cup butter, softened

½ cup sugar

1 large egg

1 tsp vanilla

2 large, ripe bananas, mashed

½ cup chopped dried plums or any dried fruit of your liking

½ cup coarsely chopped walnuts

Directions

Preheat oven to 350ºF. Grease and flour the bottom of a 9x5 inch loaf pan.

Mix together flour, baking powder, salt, and baking soda. Beat together butter and sugar at medium speed until light and fluffy. Beat in egg and vanilla. At low speed, alternately beat flour and mashed bananas into butter. Stir in apricots and nuts.

Spoon batter into prepared pan. Bake until golden and toothpick inserted in center comes out clean, 50-55 minutes. Transfer pan to a wire rack to cool for at least 5 minutes. Turn bread onto wire rack and cool completely. Serve or wrap for later.
