Cucumber with Greek Yogurt

A great refreshing salad for your fresh cucumbers.

1 large cucumber

½ cup plain Greek yogurt

1½ tablespoons cider vinegar

1 tablespoon chopped chives

½ teaspoon salt

1/4 teaspoon freshly ground black pepper

Rinse cucumber and peel, if desired. Sliced thinly. Mix the rest of the ingredients. Pour over the cucumber slices. Toss to mix. Chill at least 4 hours before serving. Makes 4-6 servings.
