Cranberry Orange Salad

Just today I was enjoying a pleasant potluck lunch at a friend’s home. One of the things I brought was a cranberry orange salad. Someone else brought a green salad. That Cranberry Orange salad was a great topping for the green salad which had pecans and pumpkin seeds in it. YUM!

1/4 cup orange juice

1/2 cup water

12 oz. fresh cranberries

1 pinch of cinnamon

2 Tbsp orange zest

1/2 cup orange, slices chopped

Combine sugar, orange juice and water in saucepan and bring to a boil. Add cranberries and cinnamon; simmer until cranberries burst about 10-15 minutes. Add orange zest and simmer five minutes, or reduce to desired consistency. Remove from heat and add orange pieces. Cool and refrigerate.
