DelMar Fish and Sweet Potato Fries
A twist on ‘fish and chips’
This is a fish recipe I have used for years. You can use any white fish with it. I find halibut to be the best. It was the first time I tried sweet potato fries is something I just tried and love the results.
DelMar Fish
1 lb fish fillets (flounder, sole, halibut)
2 Tbls melted butter or olive oil
2 Tbls lemon or lime juice
¼ cup diced onion
1½ tsp Worcestershire sauce
¼ tsp salt
¼ tsp parsley flakes or ¼ cup chopped fresh parsley
Place fish in a single layer in a greased baking dish. Combine the remaining ingredients and pour over fish. Bake in a preheated 350 degree oven for 20-25 mins. until fish flakes easily with a fork.

Sweet Potato Fries
1½ lb sweet potatoes, cut into ½ inch thick sticks
3 tbsp olive oil
1 tsp dried oregano
1 tsp garlic powder
1 tsp rosemary, crushed
1 tsp salt
½ tsp fresh ground black pepper
½ tsp dried thyme
Preheat oven to 425 degrees. Combine all herbs and put on a plastic bag or large bowl add potatoes and toss to coat well. Add oil and mix well. Place potatoes on a rimmed cookie sheet. Roast for 12 minutes. Remove from oven and turn the potatoes. Return to oven and roast 12 more minutes until brown and crisp. Serve as a compliment to a meal or as a snack.
