Shrimp, Avocado & Mango Salad
I have never much liked mangos, but when I saw them on sale at the grocery store I thought I might try a salad using one. It turned out much better than I expected with the addition of some spice. I hope you enjoy it as much as I did.
- Serves 3
For Dressing:
1/2 tsp fresh grated lime zest
1 Tbls fresh lime juice
1/4 c olive oil
1 Tbsp chopped cilantro
2 tsp finely chopped seeded jalapeno
1/8 tsp salt
For Salad:
1 Tbsp olive oil
12-16 oz peeled & deveined shrimp
1 tsp chili powder
1/8 tsp salt
6 cup torn Bibb lettuce leaves
1 medium ripe mango, peeled, pitted and diced
1 medium avocado, pitted peeled and diced
In a small bowl mix the ingredients for the dressing.
In a large skillet, heat oil over medium-high heat. Add shrimp, chili powder and salt. Cook, stirring until shrimp are opaque, about 5 minutes. In a large bowl mix shrimp with mango and avocado add salad dressing.
Arrange lettuce leaves on serving plates. Top with shrimp mixture.
