Omelet in a Basket

This week I am going to share a very easy recipe to make for breakfast. It makes it easy to serve an omelet. I have a photo of the steps.

1 slice of your favorite bread

1-2 eggs

2 Tbsp diced bell pepper

2 Tbsp diced mushroom

2 olives, diced

1 sliced green onion

Add anything else you like in an omelet, your choice

Grated cheese of your choice

Directions:

Lightly butter bread. Cut the center out of your bread and reserve. Saute vegetables till tender, about two minutes. Scoop together in frying pan. Put the bread over the veggies to fill the hole. Slowly add scrambled egg and olives so the egg stays in the middle. Cook over medium heat for a few minutes until bread toasts. Sprinkle the cheese over the top. Cover with the center piece of bread. Carefully flip the piece over and cook again until the bread is toasted. Serve.
