Creole Fish
Found a beautiful piece of Alaskan Cod at the grocery this week. Made one of my favorite fish dishes with it.
2 lb. fish fillet, cod or snapper
1½ cups chopped tomatoes
½ cup chopped green pepper
½ cup minced onion
one-third cup lemon juice
1 tbsp oil
2 tsp salt
1 tsp basil
¼ tsp pepper
dash of cayenne pepper
Place fish in a single layer in a baking dish, 13x9. Combine the remaining ingredients and spoon over fish fillets. Bake in a preheated 350° oven for 20-25 minutes, until fish flakes easily with a fork. Serve over cooked rice.
