Cucumber with Greek yogurt
The is a salad that I originally found in a St. Louis cookbook but I changed it and added yogurt instead of the sour cream, so if you love your sour cream go ahead and use it. I also added a few ingredients.
1 large cucumber
½ cup plain Greek yogurt
1½ Tbsp cider vinegar
1-2 Tbsp of fresh dill
1 Tbsp chopped chives
½ tsp. salt
1/8 tsp freshly ground black pepper
Rinse cucumber and peel, if desired. Sliced thinly. Mix the rest of the ingredients. Pour over the cucumber slices. Toss to mix. Chill at least 4 hours before serving. It gets better the longer you let it sit. Makes 4-6 servings.
