Maple-Pecan Pork Chops

Here is a new recipe I just tried with pork chops. I really enjoyed it. I should have used the gravy over the pasta, I will next time. Please use real maple syrup.

2 Tbsp spicy brown mustard

1/2 cup maple syrup

4 pork loin chops (3/4 inch thick)

1 Tbsp butter

1/2 cup unsweetened apple juice

1 cup unsweetened apple juice

1 cup pecan halves

Mix mustard, pepper and 2 tsp of syrup. Coat both sides of chops with mixture, In a large cast iron skillet, melt butter over medium heat. Brown pork chops 2-3 minutes on each side. Add apple juice. Reduce heat; simmer, covered for 15-20 minutes. Remove pork chops from skillet and keep warm. Add pecan and remaining apple juice to pan. Cook over medium heat until liquid is reduced, about two minutes. Serve over pork chops.
