Eggs in a veggie basket
Using the fresh vegetables from the garden you can make a delightful breakfast with eggs. I used the vegetables in the recipe, but you can choose your favorites.
Experiment — I did.
Olive oil
2 eggs
2 green onions, sliced
1 clove garlic, minced
½ small zucchini, grated in thick slices
6 edible pea pods, sliced
1 kale leaf, diced
1 carrot, grated
1 small pepper, sliced
2 mushrooms, sliced
In a large cast iron fry pan saute the veggies until limp. Make wells in the veggies and place eggs in the well to cook. You may need to put a little more oil in the well. Carefully turn the eggs when one side is cooked.
