Cajun Roasted Potatoes

Cajun Roasted Potatoes

This is a recipe for those who like hot and spicy; if you don’t, choose to use just salt and pepper and your own herbal mix.

6 medium potatoes, cut in 2 inch chunks

¼ cup olive oil

1 Tbsp Cajun Spice Mix (recipe to follow)

1 ½ tsp dried oregano or thyme

1 ½ tsp salt

½ tsp black pepper

Preheat oven to 375 degrees. Place potatoes in a large bowl and toss with the oil. Mix the seasonings in a small bowl and sprinkle over the potatoes. Toss to thoroughly coat. Place the potatoes on a well-oiled baking dish. Bake, stirring occasionally for 45 minutes to an hour until they are soft in the middle and crispy and brown on the outside.

Cajun Spice Mix

½ cup paprika

¼ cup black pepper

1 ½ Tbls cayenne pepper

2 Tbsp garlic powder

2 Tbsp onion powder

Combine, can be stored in a closed jar for later use. Vary the cayenne to your taste.
