Granola Muffins

Granola Muffins

One of my favorite muffins, you can even use other cereal instead, but the granola I like best.

If you do not have sour or buttermilk just add about a teaspoon of lemon juice to the milk before you mix it with the other ingredients.

Makes 8

Ingredients:

1 egg

1 cup sour or buttermilk

½ cup brown sugar

1/3 cup melted butter or oil

1½ cups granola, slightly crushed

1 ¼ cups flour

1 teaspoon salt

1 tsp baking powder

½ tsp baking soda

Directions:

Heat oven to 400 degrees. Grease 12 muffin cups. Beat egg with fork in medium bowl. Beat in milk, sugar, and shortening thoroughly. Stir in remaining ingredients just until flour is moistened. Batter should be lumpy.

Fill muffin cups ¾ full. Bake until light brown, 20-25 minutes. Remove from pan immediately; serve warm or cold.
