Garlic Dill Pesto Salmon Wrap

Yum. I went to Spokane the other day and had a wonderful wrap. Came home and tried making it and this is what I came up with. I hope you enjoy it. It is one of my quick and easy ones.

Makes 2 or 3

1 cooked (the way you want) salmon fillet

2 or 3 tortilla wraps

2 thin slices of red onion, cut slices in half

1 Roma tomato sliced

1/2 cucumber sliced

mixed greens

grated Parmesan cheese

lemon pesto ranch dressing for dipping recipe follows

Wrap all ingredients into a flour tortilla. Dip into dressing.

Dressing:

1/4 cup mayonnaise

1/4 cup Greek yogurt

2 Tbsp buttermilk

1 tsp fresh squeezed lemon juice

2 Tbsp prepared pesto

1 Tbsp fresh parsley, chopped

1 1/2 tsp fresh dill, finely chopped

1/2 tsp minced garlic

1/4 tsp paprika
