Zucchini-Lime (Lemon) Bread or Muffins

Zucchini-Lime (Lemon) Bread or Muffins

This recipe can make either a Zucchini Lime (Lemon) bread or muffins. Check the baking times because they are different for the bread or muffins.

Ingredients:

1 ½ cups flour

1 tsp ground ginger

1 ½ tsp baking powder

¼ tsp salt

½ cup sugar

¼ cup sunflower or safflower oil

1 large egg

grated zest and juice of one lime or lemon

1 cup shredded fresh or frozen* (thawed) zucchini or summer squash

Preheat oven to 350 degrees. Lightly grease and flour a 9x5 inch loaf pan. Or place cupcake liners in eight muffin cups. Set aside.

In a large mixing bowl combine flour, ginger, baking powder, salt, and sugar. Mix well. In a small bowl mix oil, egg, peel, juice and zucchini. Mix well and add to the flour mix. Do not over mix. Batter should be smooth.

Pour into prepared pan. Sprinkle top with some cinnamon sugar. Bake for 50-60 minutes or until a toothpick inserted in center comes out clean. Transfer to a wire rack and let cool slightly. Turn out onto rack and let cool.

Bake muffins for only 25-30 minutes; makes eight muffins.

* If you use frozen zucchini thaw completely and add the liquid from the thawed zucchini or your finished product will be dry.
