Marinated steak tacos

This recipe takes a bit of time to make, but it is well worth the time it takes.

Ingredients:

2 Tbsp tequila

2 Tbsp adobo sauce (recipe to follow) or from canned chipotle chiles in adobo sauce

1 lb flank steak

2/3 cup chopped fresh cilantro

2 Tbsp finely chopped fresh ginger

2 tsp chopped Fresno or jalapeno chile

2 cloves garlic

3 cups thinly sliced red cabbage

1 1/2 tsp fresh lime zest

4 tsp lime juice

4 tsp olive oil

8 corn tortillas, charred

6 jarred peppadew peppers, or other small sweet pepper, thinly sliced

1/3 cup Cotija, Parmesan or Romano cheese

In a medium bowl, whisk the tequila and adobo sauce. Add the steak and turn to coat. Marinate for one hour at room temperature, turning often.

Heat cast iron pan to medium high. Pat the steak dry. Season with salt and pepper. Grill for about five minutes on each side to medium rare. Place on a cutting board and let rest for about 10 minutes. Slice thinly.

While the steak is resting finely chop cilantro, ginger, chile and garlic together. In a medium bowl toss the cabbage, lime zest and juice, and oil with the cilantro mix.

Build your tacos with the steak, peppers, cabbage, and cheese.

To get charred tortillas cook them over a gas flame or in a dry skillet.

Adobo sauce:

3 oz. chilies, toasted

3/4 cup water

2 cloves garlic

1 1/2 tsp apple cider vinegar

3/4 tsp salt

1/4 tsp cumin

1/4 tsp sugar

Mix in a blender after toasting chilies on the grill.
