Tajín Lime Shrimp Scampi

I have tried a different Shrimp Scampi ... one that is a bit more spicy than the other recipe I have posted here. This takes 20 minutes and serves four.

INGREDIENTS:

1½ lb. Shrimp (16-20 or 21-25), tail on, deveined

10 oz. Linguini Pasta— 1 Tbsp salt to cook pasta

4 Tbsp Butter

1 Lime, Juice and Zest

10 Garlic cloves, minced

2 Tbsp Olive Oil

1 tsp Oregano

1 Tbsp Tajín Seasoning, recipe to follow

Optional:

Lime Wedges

Cotija Cheese or Parmesan Cheese

2 Tbsp Parsley, chopped for topping

PREPARATION:

Prepare stockpot with five to eight quarts of water and add salt. Cover and bring to a boil. Boil pasta until desired doneness and strain well. Meanwhile in a large sauté pan, heat Olive Oil and Butter on medium-low heat until butter is fully melted. Add minced garlic and sauté for one to two minutes or until fragrant. Add Shrimp, lime zest, oregano, and season with Tajín. Sauté for three minutes on each side or until shrimp begins to turn pink. Pour in lime juice. Add pasta to shrimp and toss. Remove from heat. Garnish with lime wedges, cheese of choice and fresh parsley.

Tajin Ingredients:

1 Tbsp chili powder

chipotle powder, or paprika

1 tsp lime zest approximately ½ lime

½ tsp ground cumin

¼ tsp cayenne pepper powder

¼ tsp garlic powder

¼ tsp onion powder

¼ tsp ground coriander

¼ tsp salt

Instructions: Mix all ingredients in a bowl, then use as a seasoning or a rub.
